Raphaël François

The Founder

Raphaël François brings over two decades of world-class culinary artistry to the table, shaped by his experience in Europe’s finest Michelin-starred kitchens and New York’s most iconic dining rooms. His journey began in Belgium under the mentorship of Claude Lavalle at Le Giverny, where his passion for refined technique and flavor first took root.

From there, Raphaël honed his craft at legendary institutions including Comme Chez Soi, Hôtel de Crillon, Four Seasons Hotel Georges V, and Hélène Darroze at The Connaught in London—where, under his direction, the restaurant earned two Michelin stars. Each chapter of his career reflects his devotion to precision, creativity, and the timeless elegance of French cuisine.

Today, as he leads the kitchen at Tesse, Chef François combines his classical training with a modern sensibility—creating dishes that are both soulful and sophisticated. His cooking tells a story of passion, heritage, and artistry, inviting every guest to experience the world through his culinary vision.

How it all started

Early Career (1997 – Early 2000s)

Raphaël François began his culinary journey in 1997, training under Claude Lavalle at Le Giverny in Tournai, Belgium. This early mentorship sparked his lifelong pursuit of culinary excellence and refined technique. Soon after, he expanded his expertise by working in some of Europe’s most prestigious Michelin-starred kitchens, including Comme Chez Soi, Château du Mylord, La Maison du Boeuf, and Sea Grill. These formative years in Belgium and France shaped his foundation in classical European cuisine.

Early Career (1997 – Early 2000s)

Rise Through Michelin-Starred Kitchens (2000s)

Throughout the 2000s, Raphaël continued to hone his craft in elite establishments such as Hôtel de Crillon and Four Seasons Hotel Georges V in Paris. He also collaborated with celebrated chefs at Hélène Darroze, Le Chalet d’Adrien, and Château de Curzay. His dedication, artistry, and leadership quickly earned him a reputation for precision, creativity, and modern French refinement.

Rise Through Michelin-Starred Kitchens (2000s)

London Accolades (2008 – 2011)

Raphaël’s time at Hélène Darroze at The Connaught in London marked a defining chapter in his career. Under his direction, the restaurant achieved its first Michelin star within five months of opening, followed by a second Michelin star in January 2011. This recognition solidified Raphaël’s status as one of Europe’s most talented contemporary chefs, blending French technique with international flair.

London Accolades (2008 – 2011)

New York & International Recognition (2010s – Present)

Building on his European success, Raphaël moved to the United States to serve as Executive Chef at Le Cirque, one of New York City’s most iconic fine dining institutions. His global experience and deep respect for quality ingredients brought a renewed sophistication to the menu. Today, Raphaël François brings over 20 years of culinary mastery—spanning Europe and America—to Tesse, continuing his mission to create memorable dining experiences rooted in tradition, innovation, and passion.
